Need:
* couple large potatoes * Olive oil * bread crumbs * optional sauteed onions * eggs * hand grater
-pre heat sautee pan on medium heat w/ olive oil (enough to coat the bottom) -peel and grate potatoes by hand with a grater(its better then a robo coop) -once potatoes are grated add 1 egg per 2-3 potatoes and 1/4-1/2 cup of bread crumbs per 2-3 potatoes,add sauteed onions if you prefer and mix together by hand. -once sautee pan is up to heat scoop an amount of mixed potatoes/bread crumbs and eggs to make a medium to small sized patty and lay in sautee pan. Make enough patties to fill sautee pan. brown patties on both sides and when edges get crispyish pancake done.
taste great lightly salted and with sour cream. Can be served with fried eggs for breakfast or any meal actually. Gravies not to bad on them either.

No wonder polish folks are fat as hell....perroigies, potatoe pancakes etc...etc...that food is so deliscious.
I have a home made perroigie recipe too...Babcia's secret family recipe, not sure she wants it public,lol.
