If you like carrot cake you'll like this recipe. Took me awhile to get the recipe to where i wanted it.


Joey’s Carrot Cake


2-Cups Sugar
2-Cups Flour
2-Teaspoons Baking Soda
2-Teaspoons Cinnamon
1-Teaspoon Salt
2-Teaspoons Vanilla Extract
1-Cup Coconut
1 -Cups Pecans ( I put the pecans on the icing. If used in the cake they steam and lose their flavor )
1- 8 oz. Can Crushed Pineapple drain off juice
¾ Cup Butter Milk
¾ Cup Wesson Vegetable Oil
4-Eggs
Mix Above Ingredients Together
3.5 Cups Grated Carrots
Added To Above Mixed Ingredients
Bake At 350Degrees For 50 minutes to 1 Hour (Depending on oven) In An 8x12 inch Greased & Floured Pan

Icing
2-8oz.Cream Cheese
1-Stick Butter
1-Teaspoon Vanilla Extract
2-Cups Confection Sugar (powdered )
Mix Well
Take Butter & Cream Cheese Out Early Enough to Get Soft / Put Icing On Cooled Cake

Then you'll like this one... Most carrot cakes are oily from the vegetable oil thats why i use buttermilk. if you have a carrot cake recipe you like just switch out half the oil for buttermilk. Theres not much juice in the can of crushed pineapple i just drain off the excess. If you don't care for pineapple you can just leave it out.
