I just wanted to pass on a Thanksgiving wish to all the members active or not. I hope you all have a chance to enjoy the day with the people you love. Be safe. Don't ride/drive drunk. I hope everyone of us gets a chance to eat too much and relax.

Thanks RK, same to you and everybody else. Got parts in for my old shovelhead yesterday, wiring harness/switches, new front brake line, throttle cable, and while I'm at it, need to see why my speedo quit working. Hope to get a ride in on turkey day if time allows.

Got the turkey thawing out in the sink - still in the wrapper, all the goodies are ready to be cooked up into a great feast.
I'm hosting the feast this year. I've been making t-day turkeys for 25 years in this house, I got it down.
throw the giblets into a small pot with some water and chopped onion... let boil then simmer for 20 minutes - makes a very good stock for the stuffing. Chop the cooked giblets up into small pieces to be added to the stuffing.
I get the prepacked Mrs. Cubeson's stuffing - you can use a loaf of bread - the stuffing has some extra seasoning in it adds some flavor.
Make the stuffing - I add pork sausage - the kind that looks like ground beef. I skip the stick of butter - the fat from the sausage is more than enough and adds a great flavor. So far everyone that's ever had my turkey loves it. The fats mix and the gravy is pretty tasty too. I add fresh celery and carrot. I chop the celery and grate the carrot. I was asked to make "extra" stuffing this year...

Wash the bird - thats a pita, but after I get it rinsed off I put it into pan and then stuff it, I add an extra scoop of stuffing in the neck cavity. Once the bird is stuffed and ready for the oven I take a stick of butter that I left out and let almost melt. I rub the butter all over the bird and leave the exess on the top to melt down and coat it as the bird starts to cook.

My pop used to use a paper bag but the breast was dry. I use heavy duty aluminum foil and cover the bird until the last 90 minutes of cook time then remove the cover - keep off and baste every 20 minutes until done.
Make sure you baste the stuffing - it gets a candy coating that is incredible.

We're trying a frozen cream pie this year, usually a fresh baked pie from one of the local shops but we were in a rut... LOL
I nice cup of coffee with a little in it - a slice or 2 of pie - I can't eat like I used to but this is one day I really try.
I hear my lazy boy calling already.
Supposed to be 75 tomorrow - sunny and warm - not the way I remember it as a kid but it will do.

What a feast RK.

We're having turkey,stuffing potatoes,squash,green bean casserole pumkin pie and cheese cake. I am so blessed to have a homemaker and a professional women for a wife. I never thought this late in my life I would be so grateful for her. Just keeping it real.

My son and his GF are over for a couple days and announced they're getting married so I been having fun with that,lol. Young girls are so easy to make blush and I'm a pro at it,lol. We like his GF alot.

RK, sounds like you and your famalia will eat well.

I have never cooked a turkey. However, this year I am the turkey cooker and I get to do it my way. :icon_cool_too: We are having fried turkey with creole seasoning. I'm frying two turkeys and one chicken... just in case I screw up. I am not sure what the other fixin's will be.

The family feast was a success. Turkey was delicious and everyone enjoyed.
Today is the final meal, turkey soup.
I take the roasting pan add some water, put the cover on and warm it all up.
Not hot, just warm. Remove any meat off the bones throw away the bones.
Take all the non-bone remains in the roasting pot and transfer it all into the big soup pot.
I use a rubber/silicon spatula to scrap out the roasting pot.
Whats in there? turkey meat, maybe some stuffing and drippings... a great beginning for soup.

Straight out of the oven - as the turkey was set on the counter to cool - I used my turkey baster and removed what liquids I could out of the roasting pan. I put those drippings into my large Pyrex measuring cups and let them cool on the side, then into the refrigerator. The fat separates out to the top, whats left in the bottom is the turkey soup stock. I scrape the fat off into a resealable container - turkey fat, butter, fat from the sausage and what ever came from the stuffing. I use the fat for dog food additive.

Add the turkey stock to the big soup pot, add water 3:1 ratio of pot contents at this point.

Start the heat, low/med.

Start cutting veggies and adding to the pot as you go.
Garlic, fresh crushed 2 table spoons.
Potatoes 2 big ones
Fresh carrots - I usually add one bag - 1 lb.
Celery whats left over after the stuffing.
Garbanzo beans - one can drained.
Season to taste- you're most likely going to need some salt, pepper, Italian seasoning, parsley... kitchen sink...
Bring to a boil and let simmer for 20 minutes, stir often. shut it off - let it rest for 15 minutes with the pot top off.
Serve and enjoy.
